- consumer preference/acceptance testing where consumers rate how much they like samples
- descriptive testing using a trained sensory panel to identify differences in attributes such as colour, flavour and texture, among samples

Sensory evaluation is conducted using the facilities at Acadia University's Centre for the Sensory Research of Food which includes Compusense® software to collect and statistically analyze data.
